Our History
A journey through the history of Knollnhof
Our story begins in 1366, when “Knolln” first appeared in the records. Even then it was a proud house with four mysterious vaulted rooms whose purpose remains a small puzzle. Perhaps knights once removed their boots here, or farmers shared their secrets.

Almost two centuries later, in 1566, Knolln had grown into a substantial farm. Imagine life here then: horses’ hooves, creaking carts and the constant bustle of work.
Fast-forward to the present: our Eisenmann family has cared for the farm for five generations. We are Magdalena and Andreas, together with our children Kilian and Lorenz – and, of course, our grandmothers.
As a Demeter farm, the natural cycle is sacred to us. We do not simply live and work on the farm; we are part of it. More than 30 hectares of grassland and 27 hectares of forest are in our care, and long-term thinking is essential, especially when protecting the forest from avalanches and landslides.


Today: Our 55 cattle, 15 chickens and three proud horses are more than livestock; they are part of Knolln. From May until late September, the cattle spend summer on the alpine pasture while we make the best winter hay. Just three cuts give the soil time to recover and flourish again.
Then there is our Saukogl-Alm at 1,200 metres, where the cattle enjoy mountain sun and alpine herbs. Farmer Andreas and Simba use the daily route as their own fitness programme – running or hiking, depending on the day.
Knollnhof has always been more than a place: it is a home, a meeting point and a source of inspiration and life. That openness and the warm welcome every visitor feels still drive us today.
